Garlic has many beneficial health effects. It has strong antimicrobal and heart friendly properties. It may also be useful in preventing some cancers.
Fresh Garlic is definitely a better option. A clove or two of crushed garlic daily (added to your salad or buttermilk) should be enough to derive its benefits. It has been observed that the bioactive compunds and the antioxidant potential of garlic decreases significantly after 20 mins of cooking at 100 deg. centigrade. if you cannot tolerate raw garlic, add fresh garlic to dishes cooked at 100 deg. centigrade in the last 20 mins. of the cooking process.
Researches in japan compared fresh garlic with garlic preserved in water, alcohol and vegetable iol, to specifically measure allicin, the active ingredient in garlic that’s also responsible for its characteristic smell. The experiments reveal that fresh crushed garlic is more stable and maintains higher levels of allcin than preserved versions. Also  garlic stored in water at room temperature is better than garlic preserved in vegetable oil. Allicin levels decreased by about half after about six days in water, but the vegetable oil storage method robbed arlic of half its allicin in a few hours.

Diabetes: Garlic health benefits also extend to diabetes. As mentioned above, garlic contains a chemical compound called allicin. Allicin combines with vitamin B1 (thiamine) to stimulate the pancreas to release insulin. Garlic can be of great benefit in treating people suffering from insulin-dependent diabetes.
